So many of you on Facebook guessed pretty darn close to today’s recipe! Guess you guys really know us, hehe.

Chocolate and mint are always a good first guess.

We thought of doing our banana coconut fudge on top of the protein brownie bars. So we started whipping up the fudge as the brownies were cooling. Then we realized that the fudge probably won’t be enough to really cover the brownies. We wanted a thick, rich frosting for these ultimate mint brownie bars.

Oh.. what… do we do now? —> we thought.

We came up with adding in an avocado and some coconut oil.Unsure of exactly how it would turn out, but we had a STRONG feeling it would be a-m-a-z-i-n-g!

And it was!

Perfectly rich, smooth andvelvety. And the avocados also helped with adding in some more natural green color. Brilliant!

These brownies need to be shared, as they are far too dangerous to be left alone with. We aretotally obsessed and think you will too!

We could eat like a hundred and still not get sick of them (ok…probably get a little sick). Basically you need to make them. Why? Because they are awesome!

They are very visually appealing too, with the pale green contrasting with the brown of the chocolate. Love it!

Mint chocolate chip protein brownie recipe. These brownies are topped with a rich creamy dairy-free avocado banana coconut butter frosting. These mint brownies are gluten-free, grain-free, dairy-free, egg-free and low sugar!

  • Prep Time: 5 minutes
  • Cook Time: 25 minutes
  • Total Time: 30 minutes
  • Yield: makes 12 - 16 brownies 1x

Ingredients

Scale

  • 1 recipe of fudgy brownies

Mint fudge frosting

  • 1 large avocado (5 oz)
  • 1 1/2 bananas (about 5 oz)
  • 1/2 cup coconut butter (4 1/2 oz)
  • 6 tbsp coconut oil (3 oz)
  • 1 tbsp vanilla extract
  • 1/21 tsp peppermint
  • handful of spinach (or could do 1/4-1/2 tsp spirulina powder)
  • 1 tbsp water

Instructions

  1. Make gluten-free brownies
  2. As it bakes, gather your frosting ingredients. Place fudge frosting ingredients into blender (we used our vita-mix blender) and blend till smooth and creamy.
  3. Once brownies have cooled spread mint fudge frosting on top. Top with chocolate chips if desired!
  4. Place mint fudge brownies in fridge to let the frosting set before slicing.
  5. Enjoy!

We find them all to have the grainy texture, we have yet to find one that is really smooth. We use Nutiva Hemp protein and Manitoba Harvest organic hemp protein powders.

to replace the bananas – you could had in about 5oz of cashews and add in maple syrup or any other liquid sweetener of choice to taste.

can use coconut meat or use more avocado, it might just have a more ‘avocado’ taste, you could try doing just stevia for the sweetness, you might have to add in some water to replace the liquid sweetener

Amazing recipe! Question: How long can these be stored? Does the frosting turn brown like an overripe avocado? I want to bring these to two different parties (one Friday, one Saturday), and would like to make them today (Thursday), but am wondering if they will still be good by Saturday?

Freezing helps with the browning, we had our store in the freezer for about 4-5 days and were fine. They turned slightly brown but not that bad 🙂

Thanks for this post! I made these tonight, following the recipe exactly and they are so delicious! I’ve been indulging all weekend in food that makes me feel guilty while I’m eating so it’s nice to have a nutrient-dense treat in hand heading into the new week! I have one question for you…do you think it’s possible to sub another protein powder for the hemp? My husband uses Raw Meal from Garden of Life so we always have that in the house…thanks again!

yes another protein powder should work, it just might change the taste and texture a little, also we would suggest adding in the wet slowly as each protein powder can be different in how much water it absorbs.

Update on my review:
These are delicious!!! The four year old ate it and loved it. He was also full of “Yum, this is good!” The husband said they were just alright. But, his opinion doesn’t matter as he eats everything not good for him. 🙂

How come the recipe calls for 1 cup Hemp powder and then says (4 oz)? One cup equals 8 oz. ???

What would you recommend as a replacement for coconut butter? I’m in New Zealand: it’s incredibly expensive in stores here, and I don’t have any time to whip up my own in the near future!

Also for the actual bars, do you think that the arrowroot could be omitted? Or would it need cornstarch or spelt flour or something similar in place?
